We all need an energy boost from time to time and this homemade snack is the perfect go-to, especially for fall! This recipe is super easy to make and requires no cooking. I think you’re going to love it. Nutritionally these energy bites are packed with good-for-you ingredients such as pumpkin seeds, which are rich in zinc, an immune boosting nutrient. These bites also contain chia seeds, which are packed with protein, fiber and healthy omega-3s. I also love the addition of oats, which contain energy carbohydrates. Enjoy!

Recipe: Pumpkin Seed Energy Bites

Makes 15 Servings

1.5 cups pitted dates

1 cup rolled oats

1 tablespoon of chia seeds

A pinch of sea salt

1 cup Organic peanut butter

1/4 cup pumpkin seeds

1/4 cup unsweetened shredded coconut


1.) Add dates, oats and sea salt into a food processor and pulse until crumbly

2.) Add mixture into an ice-cube tray 3/4 of the way full (I used a silicone ice cube tray) and press down with a spoon

3.) Next add a layer of peanut butter and top with a sprinkle of pumpkin seeds, unsweetened shredded coconut and a pinch of sea salt 4.

4.) Place in the freezer to set for a minimum of 5 hours or ideally overnight

5.) Keep stored in the freezer
