Tropical Sangria Pops

{ Makes 4 pops }

Ingredients: 

½ cup raw coconut water

¾ cup Riesling (opt for organic if possible)

1 pineapple

1 mango

1 papaya

Special equipment: 

Popsicle molds & sticks

Mini heart-shaped cookie cutter

Directions:

  1. Slice up the tropical fruit in desired thickness for mini heart cut outs.  Then using a mini heart-shaped cookie cutter, cut out hearts using each of the three fruits.
  2. Stir together the coconut water and Riesling.
  3. Pour into popsicle molds.
  4. Make sure to leave enough room to add the heart-shaped fruit since the liquid will rise.
  5. Add in your tropical fruit hearts.
  6. Place in the freezer and freeze overnight.
  7. To remove pops, fill a bowl with warm water and set the molds in the bowl for about 20-30 seconds. The water should not cover the entire molds.
  8. Gently slide the pops out of the molds, and enjoy!

Strawberry Mojito Pops

{ Makes 4 pops }

Ingredients: 

10-12 organic strawberries

3-4 large mint leaves

5 oz. La Croix lime sparkling water

1 oz. rum

3 drops liquid stevia

Special equipment:

 Popsicle molds & sticks

 Directions:

  1. Blend 6 large strawberries and 2 mint leaves in blender.
  2. Add in the lime sparkling water, rum and stevia and stir all together.
  3. Pour into popsicle molds.
  4. Make sure to leave enough room to add the sliced strawberries since the liquid will rise.
  5. Thinly slice remaining strawberries and equally distribute into popsicle molds.
  6. Also, chop 1-2 mint leaves and place small pieces into molds.
  7. Place in the freezer and freeze overnight.
  8. To remove pops, fill a bowl with warm water and set the molds in the bowl for about 20-30 seconds. The water should not cover the entire molds.
  9. Gently slide the pops out of the molds, and enjoy!

American Beauty

{ Makes 5 cocktails }

Ingredients:

1 bottle Moscato or your favorite sparkling wine or champagne (organic when possible)

2-3 lemons

5 tsp rose water

5 drops liquid stevia

Roses

Directions:

  1. Pour 25 oz. Moscato in a pitcher.
  2. Add in rose water and stevia.
  3. Squeeze lemons to make about 5 oz. fresh squeezed lemon juice and add to pitcher.
  4. Stir all together.
  5. Add in rose ice cubes.  (To make rose ice cubes, cut off stem and place roses and petals in ice cube trays, add water and freeze overnight.)

Watermelon Name Kabobs

Cut out the names of your guests using mini alphabet cookie cutters from watermelon slices. Then slide onto kabobs sticks.

Cherry Mini Martinis

{ Makes 7 mini martinis }

Ingredients:

2 cups cherries

1.5 tbsp flaxseed

4 oz. vodka

Ice

Directions:

  1. Slice cherries in half to remove seeds.
  2. Blend cherries and flaxseed in blender.
  3. Pour into martini shaker and add vodka and ice.
  4. Shake well.
  5. Pour into mini martini glasses.
  6. Optional:  Garnish with a cherry.
