Oh how I love waffles on the weekend! You may be surprised and delighted to know that these Cinnamon Apple Waffles are gluten-free, vegan & totally delicious! A few things to keep in mind as you grocery shop to make this recipe, always stick with one hundred percent real maple syrup as appose to “lite” or light syrups which often can contain artificial ingredients. Real maple syrup is also packed with vitamins and minerals! I also love almond butter as a great alternative to butter or margarine. Almond butter contains protein & fiber, which will help you feel full and satisfied. Enjoy!

Cinnamon Apple Waffles

Makes 4 Servings

Ingredients:

2 flax eggs (2 tablespoons of ground flaxseeds with 6 tablespoons of water)

2 cups of rolled oats

1 cup of unsweetened almond milk (or non-dairy milk beverage)

1 cup of water

1 ripe banana

1 medium apple

Cinnamon

Maple Syrup

Peanut or almond butter (optional)

Directions:

  1. In a small dish add ground flaxseed & water, shake or stir, and let set for 3 minutes
  2. Then add all ingredients into a blend and blend for 15 – 20 seconds
  3. Pour waffle batter into a waffle maker
  4. Meanwhile, dice apple & add to a medium size bowl
  5. Sprinkle with cinnamon and mix together
  6. Top waffles with cinnamon apples and drizzle with maple syrup
  7. Add almond or peanut butter for a boost of protein (optional)
