Simple Mixed Green Salad

Makes 4 servings


8 cups of fresh greens (arugula, mixed greens, kale, romaine)

8 tablespoons of unsalted sunflower seeds

4 tablespoons of Lemon Vinaigrette dressing

1 fresh, ripe and sliced avocado

1 yellow bell pepper, chopped

1 cup purple cabbage, chopped

Sea salt


Wash, dry and chop lettuce and place in to a medium size bowl. Add vinaigrette dressing, sunflower seeds, sliced avocado, bell pepper, cabbage and sea salt. Toss (stir) salad together and enjoy!

Healthy Grocery Girl’s Lemon Vinaigrette Salad Dressing

Makes 4 – 6 servings


¾ cup olive oil

¼ cup apple cider vinegar

½ lemon, juiced

1 tablespoon of maple syrup

Sea salt and freshly ground black pepper


Add all ingredients into a glass jar with a lid. Shake or whisk together to evenly combine all ingredients. Store salad dressing in a dark, cool cabinet, not the refrigerator. Ideally, use within 1 week.
