Starter Cleanse Salad RECIPE

This salad is very fresh and light tasting. I make a HUGE batch of this salad and munch on it throughout the week. It makes an excellent side salad or the base for a meal salad.

I like to pair my salad with a slice of sprouted whole-grain toast & homemade avocado spread (avocado mashed, salt, pepper) or a side of blue corn chips and hummus.

Ingredients:

*finely chop all ingredients 

1 head of Broccoli

1 head of Cauliflower

1 Red Bell Pepper

3 large Carrots

1/2 a head of Purple Cabbage

2 cups spinach (or a few large handfuls)

1/2 cup of Parsley

1 tablespoon of Crushed Garlic

3/4 cup Currants

1/4- 1/2 cup of Sunflower Seeds

Lemon Juice (1 Lemon)

Sea Salt and Freshly Ground Pepper

Directions:

Finely chop up all ingredients

Add to bowl

Squeeze lemon juice over salad

Sprinkle with salad and pepper

Mix all ingredients together

Serve & enjoy!
