Nourishing Chickpea + Avocado Salad

Spring is here! Warmer weather may be inspiring you to clean your house, spend time outdoors and also spring clean your diet!

One of my favorite recipes from this program is a nourishing chickpea and avocado salad that I named the “Wow, That’s Good Bowl”! The inspiration for this name is credited to my husband, because these were the exact words he used to describe this meal the first time he tried it!

Makes 2 Servings


1 yellow bell pepper

¼ small purple cabbage

2 small heads of broccoli

1½ cups of cooked brown rice

1 can (15-ounces) of garbanzo beans

1 medium avocado

2 tablespoons of hemp seeds

Simple lemon vinaigrette dressing



First, wash and chop bell pepper and cabbage. Wash broccoli and chop or add into a food processor to finely chop. Add all vegetables into a bowl with cooked brown rice and drained and rinsed chickpeas. Top with sliced avocado, hemp seeds and lemon vinaigrette salad dressing and enjoy!



Makes 4 to 6 Servings


¾ cup olive oil

1 fresh lemon, juiced

A pinch of sea salt



Add all ingredients into a glass jar with a lid. Secure lid tightly and shake, or whisk together ingredients to evenly combine. Store salad dressing in a dark, cool cabinet, not the refrigerator.
