To get this week started on a healthy note, take a look at the smoothie below for week 2 and substitute it for a meal each day. Follow along with the other requirements to ensure that the smoothie challenge will work for you. I loved the peach smoothie last week and look forward to making this next one right now. Makes One,16-ounce smoothie


2 cups of greens (romaine, arugula, kale and / or spinach)

1 banana

1?2 lemon, juiced

1 teaspoon fresh ginger, minced

1 cup water or coconut water

1 tablespoon chia seeds

1 serving plant-based protein powder *see recommendations

1?2 cup ice


Combine all ingredients in a high- speed blender and blend on high for 20-30 seconds. Enjoy!

    It was a little watery and vegetable-y tasting for me… I added more ice and some fresh orange juice to help the taste and consistency. Thanks for the recipe!

      I like the add of orange juice! I’ll have to try that as well. If this one is too green and vegetable tasting you should try one of the other ones as well and substitute those in as you like. 😉

  • My fiance and I are a week behind but we already feel great from the challenge. I totally agree with Chelsea about how watery it is so I will try more ice cubes tomorrow. I found the taste to be a nice kick but we are putting the ginger through a press so maybe that’s the difference?
